			<content:encoded><![CDATA[<p>We recently conducted a cooking class for 20 children from the Children’s Cancer Society.<br />
This is one of the most meaningful events we have done this year and my chef and I thoroughly enjoyed it.<br />
We made Chocolate Mousse and the kids loved it. Heres what we used.</p>
<p>Cadbury Chocolate Mousse</p>
<p>700g Cadbury chocolate<br />
80g yolks<br />
50g sugar<br />
250ml cream<br />
250ml milk<br />
1000ml whipped cream</p>

<p>It was 2am.<br />
We had been working hard for the White Card event which will be blogged about soon.</p>
<p>I was hungry and despite working with different types of sugary foods all the time I had a  craving for something sweet.</p>
<p>I whined and Chef D came up with this insanely awesome dessert in just 5 mins.<br />
Everything he used was part of a different dessert at the bar.</p>
<p>Of course, looking at the ingredient list, it is hard to imagine what could have gone wrong. But it was Oh so right.</p>
<p>Chocolate Icecream (valrhona 70%), feullitine, toasted marshmallow, macademia nuts, chocolate sauce (pure chocolate 72% araguani), crushed buttery shortbread</p>
<p>It was so good we ran this as chef’s special for the next 3 days.</p>
<p>5mins of brilliance and a sinful satisfaction.</p>
