A great way to present the garnish for our 7th course in the degustation menu (launch date: 2nd week September).

Instead of just sprinkling sugar, we add a slip of popcorn paper and it does the trick!

What I did with chocolate and water, I wanted to replicate with popcorn.

When I first unmolded it, the first word that hit me was “Gothic”.

To me, they looked like blocks of white Gothic buildings.

We had a little fun with it allowing it to melt slowly to transform back into its original state.
