Getting ready for Hongkong

We have a really exciting event coming up in Hongkong.
This is for the opening of K11 shopping centre and we are catering 6 courses of sweet and savories with undergrowth as the theme for the menu.

All the dishes will be paired with sound and light

red/black caterpillar (mara des bois + liquorice)
